Sườn non rửa sạch, cho vào nồi chần qua. Ướp sườn với chút muối, đường, rượu trắng trong khoảng 10 phút.
Đổ nước sao cho mực nước không ngập miếng sườn, thêm gừng, quế, hồi, hành lá… đun trong khoảng 15 phút cho đến khi thấy nước cạn dần.
Thêm chút dầu ăn, nêm nếm lại gia vị cho vừa miệng, thêm ½ thìa ngũ vị hương, vài lát gừng, ớt… đun tiếp khoảng 10 phút.
Thêm coca vào nồi cho xâm xấp mặt sườn, đun trong khoảng 30-45 phút hoặc cho đến khi nước rút bớt, miếng sườn sẫm màu. Nếm thấy các vị mặn, ngọt hòa quện thì tắt bếp.
