Cắt bỏ gốc nấm kim châm, rửa nấm với nhiều nước cho sạch cát rồi giũ cho nấm ráo nước. Bóc sạch vỏ tỏi, băm nhỏ. Nhặt sạch hành lá, thái nhỏ. Bỏ cuống ớt, thái khoanh nhỏ.
Đun nóng 30-40ml dầu ăn, cho tỏi, ớt đã cắt nhỏ vào đảo đều cho dậy mùi thơm. Nêm nếm gia vị sốt cho nấm kim châm nướng gồm: 1.5 muỗng canh nước tương, 1.5 muỗng cà phê đường, 1 muỗng cà phê dầu hào và chút nước lọc, đun sôi cho tan gia vị rồi tắt bếp.
Gấp giấy bạc thành một chiếc khay đựng sâu lòng. Xếp nấm kim châm vào đáy của giấy bạc, rưới hỗn hợp sốt vừa đun ở trên lên đều khắp mặt nấm kim châm. Sau đó, đặt khay nấm kim châm vào một chảo lớn, sâu lòng. Đậy kín nắp vung lại và đun lửa vừa khoảng 10-15 phút cho nấm kim châm nước chín là được.
